Seattle vs. Denver - Sam's Battle of the Foods

This week, Sam brings us two recipes - one from Seattle and one from Denver - in honor of Sunday's Big Game. Which one takes the cake? Sound off in the comments below!

Seattle Salmon Skewers

Serves 4 people

Huge flavor but so damn simple. Skewers of seared salmon with an oh-so-delicious sauce of sweet chili, soy & lime juice.


  • 2 lb fillet fatty Salmon, skin removed, cut into 1 inch cubes
  • 2 tablespoons canola oil
  • Kosher salt and fresh ground pepper
  • 1/4 cup sweet chili Sauce
  • 2 tablespoons soy sauce
  • 1/2 fresh lime, juiced
  • 3 green onions, finely chopped fine
  • Sesame seeds


  1. Skewer cubed salmon on each skewer, drizzle with oil and season with salt & pepper
  2. Mix chili sauce, soy & lime juice - set aside
  3. Heat grill pan to medium high and sear salmon about 2 minutes or until good grill marks - flip
  4. Brush top with sauce mix well and cook another minute or so
  5. Brush again before serving & sprinkle with a bit of green onions & sesame seeds
  6. Brush each side with sauce near end of cooking, cook for one minute further on each side further. Serve on platter and drizzle over sauce and garnish with the rest of the sesame seeds and green onions. Pour rest of sauce on side dish for dipping.
  7. Eat.


Denver Omelet-ish Nachos

Serves 6-8

Think Denver Omelet, but turned into nachos. Genius? Aw shucks, why'd you have to go and embarrass me by saying that?


  • 1 green pepper, diced small
  • 8 ounces white mushrooms, diced
  • ½ pound ham, diced small
  • 1 small yellow onion, diced small
  • Kosher salt & fresh ground pepper
  • 2 cups mixed cheddar/jack cheese, shredded
  • Tortilla Chips
  • Over easy fried eggs, optional (but they shouldn't be)


  1. Heat large non-stick pan or wok or medium heat and add green pepper, mushrooms, ham & onion
  2. Cook until vegetables are softened, and ham has started to get a little crispy on the edges – season to taste with salt & pepper
  3. Put a large layer of chips in a microwave safe dish, cover with half the ham mixture then half the cheese – repeat layering
  4. Microwave until hot, bubbly and you can't wait anymore
  5. Top with an over-easy fried egg, or two, or three
